The grocery store "boom" is partially due to the population influx to the greater Metropolitan Stastical Areas (MSA’s) throughout Texas. 
The names we all know are doing the most expanding, with Kroger opening 35 percent of all stores in Texas in 2016.
Not suprisingly, HEB is in second place, opening more locations all across Texas.
